Fast, Fresh Tacos For Every Gathering

Walking taco catering for public and private events, big or small

Our truck rolls up, fires up the flat top, and starts serving in minutes β€” walking tacos in a bag or classic street tacos, slow-cooked and finished fresh. We handle the setup, the flow, and the cleanup, so you just bring hungry guests.

Our Story

Two friends, one bag of tacos

The Walking Taco food truck

The Walking Taco started in 2021 when David and Joseph, two friends who'd bonded running food trucks together (including a 1,200-person corporate catering), got to talking about opening something of their own. David remembered the walking tacos served at his high school graduation β€” fast, fun, and gone in minutes. Joseph had seen the same thing at a family gathering out in Illinois. Two guys, the same idea, out of nowhere.

We serve it both ways: the classic walking taco in a bag and traditional street tacos, built on slow-cooked proteins like ground beef, shredded chicken, shredded pork, and carne asada, finished with bold, fresh salsas. The style is up to the host, but the quality never changes. What sets us apart is how we run things β€” we pick up the phone, we're upfront, and someone from our team is always ready to talk through your event.

Today that means multiple teams working across different metros, from backyard parties of 10 to gatherings of 1,200, without losing the thing we started with: good food, cooked with care, served fast to hungry people. We're proud of the quality we've kept consistent the whole way through, and we're not done growing it.

Tacos work at every party β€” that's kind of the whole idea.

How It Works

How Walking Taco Service Works

We show up early, get parked in the right spot, and start firing up the flat top and fryer before your guests ever line up. No stress, no scrambling β€” just a truck getting ready to feed everyone fast.

Once the window opens, service moves quick. Walking tacos in a bag or classic street tacos, either way it's fun, handheld for guests on the go, and built to keep the line moving. When the last guest is fed, we pack it up and roll out β€” no kitchen for you to clean.

David, Senior Booking Agent for The Walking Taco
David
Senior Booking Agent

Walking tacos for busy events land smoother when David's the one sizing the setup, and his numbers back it up: 1,500 meals a day for Chevron across 30 straight days, plus roughly 1,200 meals a weekend keeping FedEx fed through Covid. If a truck ever stalls mid-event, he's ready to switch to buffet service so guests still get easy food they can grab and customize without missing a beat. He also helped pass Colorado's statewide health and fire reciprocity bill, clearing out the old jurisdiction-by-jurisdiction mess that once made walking taco service tougher to schedule across schools, festivals, neighborhoods, and casual parties.

Brandon, Senior Booking Agent for The Walking Taco

Brandon's path into events started with banquet, expediting, and front-of-house shifts back in 2003, and these days he's the one lining up walking taco setups for busy events at every scale. With 12 years in food truck and catering logistics β€” 6 of them hands-on running trucks and live service β€” plus experience supporting names like Amazon, Starbucks, the Denver Broncos, Nuggets, Southwest Airlines, Harvard, and Texas A&M, he's built a sharp eye for what makes handheld taco service work, especially across Denver, Fort Collins, Miami, Fort Lauderdale, Boston, and San Francisco. His go-to advice for a simple taco setup that keeps the line moving: trim the menu down so guests get faster, better service every time.

Jess, Food Truck Booking Agent for The Walking Taco
Jess
Food Truck Booking Agent

Jess has spent 2 years booking food trucks and 4 more before that working directly in kitchens and trucks across 8+ cuisines, and her one-line advice for hosts sums up her whole approach: factor in your demographic over just the headcount. That thinking shaped her support of a 5,000-guest Southwest Airlines event and, later, a 5-day run prepping 10 trucks for 50 events and about 7,500 guests, each truck loaded with correct menu and inventory for walking tacos guests can grab and keep moving with. Before the line ever opens, she's also checking insurance, safety compliance, references, and fire-risk gaps, so a simple taco setup for schools, festivals, and neighborhood parties stays easy from start to finish.

John, Food Truck Booking Agent for The Walking Taco
John
Food Truck Booking Agent

John spent 8 years in hands-on food truck and catering work β€” including 6 years on trucks themselves and 2 managing stores β€” before moving into booking, so he knows what a walking taco setup actually needs to hold up under a busy line. His Denver permit and fire inspection background now informs how he vets service in Los Angeles, Orlando, Miami, Sacramento, Washington, DC, and beyond, always checking guest count, service speed, and setup style before pairing a taco setup to an event. Ontario, CA put that to the test twice over: John ran a 3,000-guest two-day school event there, and later, when a trailer's tow vehicle lost a radiator hose en route to another Ontario booking, he got a replacement truck rented and tacos on-site right on time, earning a rebooking the following year.

Kaleb, Food Truck Booking Agent for The Walking Taco
Kaleb
Food Truck Booking Agent

Give Kaleb a guest count and a timeline, and he'll figure out the rest β€” like the time he shifted a 200-guest wedding from buffet to food truck service with just 30 minutes' notice, no stress involved. He's spent 6 years building that kind of readiness, including a save where a catering truck's wheel bearing failed en route and he had a substitute rolling in under 20 minutes flat. For walking taco setups built for schools, festivals, and busy events, Kaleb still checks the basics first: current fire extinguishers, valid health and fire licenses, and coolers labeled and organized, so the line keeps moving from the first guest to the last.

Simon, Food Truck Booking Agent for The Walking Taco
Simon
Food Truck Booking Agent

Fire-safety readiness and quick-moving lines are what Simon checks first when he helps plan a walking taco setup, backed by 10 years in catering that split into 7 years running trucks and 3 years leading prep kitchens for up to ten trucks feeding hundreds of guests daily. Southwest Airlines has booked him repeatedly for around 1,200 employees per event, and he's handled brand work with Kroger, Amazon, and FedEx too, but the story he tells hosts is about a fall festival expected to draw 100 guests that nearly tripled to 300 β€” he made a commissary run himself so the walking tacos kept moving and quality never dipped. Simon's advice for any host: keep the menu to your favorites and the line takes care of itself.

Stephen, Food Truck Booking Agent for The Walking Taco
Stephen
Food Truck Booking Agent

Stephen's food truck resume includes cooking, driving, and serving across a dozen-plus rigs and helping run a 12-truck operation, with corporate events past 1,000 guests and a 3,000-meal day among his highlights β€” experience that now shapes how he plans walking taco setups for schools, festivals, and neighborhood parties. He's the guy who once turned a next-day request into a booked event within the hour, and got a stranded catering truck re-hitched and rolling into service with 50 minutes to spare. Ask about keeping a walking taco line moving and he'll say it plainly: two entrΓ©es, easy toppings guests can grab and customize, no complicated setup needed.

Thomas, Food Truck Booking Agent for The Walking Taco
Thomas
Food Truck Booking Agent

When walking tacos for busy events need a truck behind them, Thomas checks the paperwork first β€” COIs, permits, insurance minimums, and a track record that satisfies Denver Department of Public Health & Environment requirements and Denver Fire Department standards. His concept ownership and catering-team coordination since 2016 sharpened that instinct, and it showed when a generator quit mid-event: he caught the low-oil safety shutdown, topped it off, and had the walking taco bar back to a simple setup that keeps the line moving within minutes. Ask him about hosting schools, festivals, neighborhoods, or casual parties, and he'll say the same thing every time β€” plan the service flow, not just the menu.

Zo, Lead Booking Agent & Food Truck Consultant for The Walking Taco
Zo
Lead Booking Agent & Food Truck Consultant

When Zo lines up a walking taco booking, he's drawing on 16 years of running trucks, smokers, and kitchens with his own hands, plus a resume that includes stints with Quest Diagnostics, Monster Energy Drink, St. Joseph Hospital, and NFL LA Chargers staff. Culinary degree and ServSafe certified, he's steered thousands of catering and food truck events, including a single day pulling off eight large holiday bookings with a skeleton crew, so a fun handheld taco service feels easy no matter the guest count. He keeps an eye on Douglas County and Castle Rock fire expectations too, favoring prime meats, quality wood, and fresh prep so the toppings bar stays quick, easy, and school-and-festival ready.
